Last week I cooked chicken marbella from Not Quite Nigella. It was nice enough, but fairly watery, and needed rice to soak it up.
Chicken, capsicum, capers, olives, garlic, bay leaves, red wine vinegar, salt, pepper. I used some thyme because I had plenty and we didn't have enough parsley and no prunes.
Mix it all up to marinade overnight
Add half a cup of white wine and some brown sugar on top
And roast
