Pork Larb

This is something the sweetie has cooked in the past but I thought I'd have a go at it.  It's quite simple, just 500g pork mince browned, a couple of chillies finely chopped, a tablespoon of fish sauce, two tablespoons of lime juice (could have used a bunch more!) and a teaspoon of brown sugar.  In another frying pan dry heat some rice til browned, then grind in a mortar and pestle til fairly fine.  Mix all together with a whole bunch of coriander.  It's quite tasty, but even with cooked rice it's a very "meaty" dish and I feel like there should be more vegetation to go with it.
