Recently Neil noted that Woollies are selling very thick-cut bread. A couple of weeks ago we went on a mission to get some. I dug out the recipe I'd found a while ago for Sizzler Cheese Toast. I *loved* that stuff at Sizzler. I think there's still one in Campbelltown.. must get there again some time.
Anyways. Loaf of Texas toast in hand, mix up equal parts of butter and parmesan cheese into a paste, fry cheese side down with a lid on to steam. You're welcome.
So I used powdered parmesan cheese, which didn't really melt, so the texture was a bit crumby rather and meltedy. I tried again the next day with shaved actual parmesan cheese, but that didn't work as well. Also, don't make the spread too thick, otherwise it tends to separate from the bread.
It was damned delicious though! We might have eaten the entire loaf that weekend..
